Our vineyards constitute more than 90% Sangiovese, with the remainder being Colorino and Cabernet Sauvignon vines.
The vines range in age from 5 years to 25 years and there are 3000 vines per hectare in the older vineyards, and 5000 vines per hectare in the younger vineyards. The trainig method is Guyot and spur-pruned cordon.
We get high quality grapes by ensuring that each vine only retains 8 buds when pruned, done during the winter months. This process is then followed by thinning which is the removal of excess or immature grape clusters, which takes place at the time of veraison (color change of grapes). Before harvesting, the vines are defoliated, removing leaves that are inhibiting light exposure and air circulation to the grapes in order to reduce the risk of desease and to allow for optimum maturation of the grapes. The aforementioned processes, as well as the harvesting, are all undertaken by hand. The average yield per vine is up to 2 kg of grapes.

We have mantained the traditional low-density planting of the trees in our olive groves and spontaneous herbs to grow on the ground beneath them.
The extremely low impact of typical diseases of the olive trees, including the “olive fly” (Dacus Olae) permit us to completely avoid the use chemicals and to obtain harvest of outstanding quality .
We grow typical tuscan varieties of olive tree including frantoio mostly and, to a lesser extent, Leccino, Moraiolo and pendolino.
The Olives are harvested by hand prior to be fully mature and then cold pressed within 24 hours.
in order to obtain extra virgin olive oil of excellent quality, low acidity with a high phenol content.
Our Olive Oil has an intense flavour, yet it is gentle on the palate, with a fragrance that has an inkling of artichoke and almond, typical of the tuscan olive oil.
It comes bottled in a dark green glass bottles in order to perfectly preserve our olive oil.
